“Close your eyes…You are in a cave…” intones the website and rightly so. Ristorante Grotto Palazzese, in Polignano a Mare, Italy, is a haute cuisine restaurant carved out of the limestone caves overlooking vistas lapped by the waves of the blue-green Adriatic Sea. Mmmm…so amore and romantico. The cave is further illuminated by candles and the natural aquamarine reflection of the water, heightening the drama of the atmosphere. Menu wise, it is pure Italia Exotica and very seafaring: Croquettes of Tuna Tartare, Crunchy Double Cooking Octopus, Seared Scallop, Catalan shell fish salad… all are Michelin-quality crafted meals infused with Italy’s best produce of cheese, tomatoes and a range of herbs and condiments.
