A Fruity-Vege Colour Burst Lunch & Smoothie

 

AN EASY-PUT-TOGETHER, no-cook, quickie anytime meal inspired by a pasta salad shaker sold at a roadside stall which we bought and couldn’t get enough of.

We decided to do our own and here’s the result.

The salad with all the veges below, plus elbow pasta

For the Salad

Recipe & Method:

Toss in

  1. ¼ bowl or 3tbs of cooked elbow or spiral pasta
  2. Handfuls of:
  • Arugula1arugula
  • Green Butterhead Lettuce
  • Red Butterhead Lettuce
  • Multi-coloured Cherry tomatoes
  • Diced Japanese Cucumbers
  • Finely Sliced Carrot Sticks
  • Applemint Leaves
  • Coriander
  • Finely sliced raw shallots

Optional

  • Strawberries
  • Grapes

Pour in the Salad Dressing of your choice. ..(Ours was Kewpie Cheese Sandwich Sauce) ..and tuck in!

 

Salad Dressing

Caesar is a good idea too, as is Thousand Island or Balsamic Vinegar or simply canned Mushroom or Tomato Pasta Sauce.  What you decide to throw on top of your salad is entirely up to your taste buds

All the fruits needed for the smoothie

Recipe & Method:

Toss into blender

  • Bananas
  • Grapes
  • Pears

Press the button, pour out to glass and gulp. Mmmmmmm
